CRANBERRY GINGER LOAF

One of the many (many) reasons I love baking is because it gives a reason to reach out connect and share with friends or strangers. To me there is nothing better than receiving a gift or treat that is "home-made." You know it comes from the heart when anyone takes the time to prepare something from scratch these days. No boxes, no prepared ingredients, only fresh and original.

Given the winter season I wanted to bake either ginger bread or my family's cranberry bread recipe. However with my indecision I decided to get crazy and just combine the two! So i went with a spicy gingerbread loaf recipe and added fresh cranberries. The perfect combination for flavor and visual presentation. Christmas is right around the corner so I wanted to throw a splash of some holiday color in these treats as well.

Wow, the smell alone was incredible and had my home radiating with spicy cents of allspice, and clove, nutmeg and ginger. All of which are also great for boosting the immune system, especially during the colder months. See there's always more to my madness than what the eye can see. Really the best part about these loafs is that they are completely guilt free! No gluten, no dairy and no refined sugar.  My yogi friends will be happy to know they can dive into these after our yoga class and not feel heavy or weighed down.

Cranberry Ginger Spice Loaf

1 Cup sorgum Flour

1/2 Cup coconut flour

1/2 Cup almond flour

2 teaspoon baking powder

½ t baking soda

¾ t zanthum gum

1/2 t salt

1 Cup coconut sugar

1 egg

2 t vanilla

1 T molasses

½ c dairy free yogurt

1/3 c grapeseed oil

¼ butter

1 T fresh ginger

2 t cinnamon

1 t nutmeg

1 Cup fresh cranberries

Turn oven on to 350 degrees. Line 1 large loaf pan or 2 small loaf pans with parchment paper and set aside. Combine all dry ingredients in a large bowl and set aside. Blend the wet ingredients together in another bowl. Slowly add the dry ingredients to the wet ingredients making sure to thoroughly combine. Lastly, toss in your cup of fresh cranberries or nuts if you desire. Poor batter in pans, you may have to use a spatula to evenly distribute batter into pans. Bake 60 min for one large loaf or 35 minutes for two small loaf pans.

TA- DA! Success. The consistency came out perfect. Gluten free baking is always a gamble let alone when your trying to wing it. I made sure to pour some extra love and faith in the batter and i think it worked. I only had one chance to get these right today. Now i'm taking these fresh out of the oven, wrapping them up and handing them off. These will be a great guilt-free treat for my yogi pals to enjoy after class that won't leave them feeling heavy or weighed down. I love using wholesome ingredients for that reason alone. Knowing that our bodies can break down and use every last ingredient.
