Lemon Arugula Pasta Salad
I’m loving this summer salad; it’s been one of my favorite go-to’s lately. Anything with lemon I can’t resist. Simple, easy to prep, and bursting with fresh flavor! It’s been a great way to have a healthy salad in your fridge all week that’s filling, ready to go, and doesn’t require turning the oven on during the heat of summer. You will have to cook the pasta, but you can premake it until you're ready to put your salad together!
Here’s what you’ll need:
Ingredients:
3 cups of boiling water
3 cups of arugula
2 cups of cooked pasta of your choice
2 lemons juiced
2-3 cloves of garlic, chopped
1 cup of pine or walnuts
1/2 cup virgin olive oil
3 tablespoons red wine vinegar
1/2 shaved parmesean
Directions:
Start by boiling 3 cups of water. Once boiling, add your pasta of choice (bowtie, fusilli, elbow, etc.). Once your pasta is al dente, drain it, rinse it with cold water, and let it sit. This will help keep the pasta's structure together for the salad. Don’t overcook!
While your pasta is cooling, mix in a large bowl the dressing of chopped garlic, olive oil, red wine vinegar, and lemon juice.
Then toss the pasta in the bowl and mix it thoroughly in the dressing. Add the arugula next, then your nuts, and finish with parm. Stir gently all together. Add a pinch of salt and pepper and enjoy!
This gets better with time as the juices soak into the pasta! Yum!
